What is the difference between Hot-swappable and Non-Hot-swappable?

Hot-swappable versions allow you to change switches without soldering. Non-hot-swappable versions have switches permanently soldered to the PCB.

How do I pair my keyboard via Bluetooth?

Switch the side toggle to Bluetooth mode, then hold Fn + 1/2/3 for four seconds to enter pairing mode and select the keyboard on your device.
